Turkey plays an important role in
beekeeping with its suitable climate and
floral diversity. Besides getting honey
produced, beekeeping also provides
vegetal production and it is placed between
agricultural business nowadays. Honey
processing is still done with traditional
methods. At this point, food safety systems
take place in having a safe final product.
HACCP (Hazard Analysis and Critical Control
Points) is a reliable and effective system
that allows tracking of all processes and it is
widely used in food sector. In this study, the
necessity and adhibition of HACCP system
for the production of honey is explained.
