Karaçalı (Paliurus spina-christi Miller) ve Ayçiçeği (Helianthus annuus L.) Ballarının Mikroskobik Yapısı ve Biyokimyasal Özelliklerinin Karşılaştırılması

3 Tavas Gıda Tarım ve Hayvancılık İlçe Müdürlüğü, Denizli Viewed : 1889 - Downloaded : 884 The aim of this study was to investigate microscopic structures and compare the biochemical properties of honeys collected from blackthorn (Paliurus spinosa) and sunflower honey manufacturers in Edirne province. In this study total of 30 pieces of honey samples which consist of 15 pieces blackthorn honey and 15 pieces Sunflower honey were used. According to the results of biochemical analysis, the obtained values for; HMF, moisture, invert sugar, saccharose, ash, diastase, acidity , conductivity, pH for the samples of blackthorn honey were determined as; 6,3 mg/kg; %16,26; %62,18; %1,35; %0,3214; 13,9; 14,7 meq kg-1; 0,718 mS/cm-1; 5,9 respectively. The results were; 11,34 mg/kg; %17,60; %61,27; %1,67; %0,3400; 8,30; 39,70 meq kg-1; 0,429 mS/ cm-1;4,3 for the samples of sunflower honey.
Counts of sunflower and blackthorn pollens were determined under microscope and pollen density values were calculated by comparing this amount with pollen quantity in honey. Pollen density was %49.14 in blackthorn honey and %76.50 in sunflower honey on average. This obtained data showed that pollen density of both honey were dominant structure.
The results of analysis found appropriate to Turkish Food Codex Regulation (TFC), European Union standards and FAO/ WHO CODEX. Increasing of studies about local honeys which has limited production such as blackthorn honey will be considered to contribute our honey production significantly.
